Spicy Garlic Meatballs

With football season approaching, I took to Pinterest to find the perfect recipe. I found some inspiration and ended up making these delicious Spicy Garlic Meatballs! I used a copycat recipe for Buffalo Wild Wings’ Spicy Garlic sauce, and it could not have gone better with this recipe!

For those of you that hate the rambling, you can jump right down to the “How It’s Made” tab to get to the good stuff.

A few years ago, when I was a junior in college, I began my obsession with chicken wings. Guys, it was bad. I would eat Spicy Garlic Wings every day. Let me tell you, it’s not good for the digestive track to eat that much hot sauce, but I couldn’t resist. It also didn’t help that my dad kept supplying my wing desires through Buffalo Wild Wing gift cards.

I would only order Spicy Garlic Boneless Wings from BWW, and I would order them often. There is just something about that garlic-y hot sauce taste that is divine with anything it touches! Not to mention, BWW has some crazy good ranch.

Eventually, I ran out of gift cards, but my addiction lived on. One weekend, while scrolling through Pinterest, I found the pin that changed my life. #dramatic! I found the Copycat Spicy Garlic sauce recipe that I’m going to share with you today. I adapted the recipe to fit my tastes (and my pantry), but if you would like the original recipe by Becky at Love To Be In The Kitchen, you can find it here.

I used this sauce on chicken nuggets, chicken strips, popcorn chicken, as well as actual bone-in chicken wings, but today, I’m putting this sauce on meatballs!

How It’s Made

Of course, I am one for simplicity, so I started with frozen meatballs. Chicken meatballs are the tastiest, but we had beef meatballs in the freezer.

I began by baking the meatballs; you could fry yours, if you would like, but I hate frying foods! It’s just too messy.

As the meatballs were baking according to the package instructions, I began making the copycat Spicy Garlic sauce. This sauce is so crazy easy that it’s not even fair to know how to make it. It’s versatile and easy to use with chicken wings, meatballs, and anything else you can conjure up.

For this sauce, you will need: Red’s Hot Sauce Original, Cayenne Pepper, sugar, black pepper, and vegetable oil.

Throw all the ingredients together and whisk over medium heat until it’s boiling. You’ll simmer for 20 minutes, and then pour the sauce over your meatballs.

This sauce takes a very long time to go bad, so we normally just leave our extra sauce in a mason jar on the counter. We use it up so quickly! You can refrigerate for extra longevity and freeze it if you would like to keep it indefinitely.

Warning: this stuff is spicy!

I like to serve this dish with ranch or blue cheese dressing. If you prefer to make your own ranch dressing, you can follow this recipe by Snappy Gourmet!

Spicy Garlic Meatballs

An easy, quick tailgate food or dinner at home that your family and friends are sure to love!

  • 1 bag frozen meatballs (chicken is preferred but any meatball will work)

Spicy Garlic Sauce

  • 1 c Frank's Ceyenne Pepper Hot Sauce
  • 1/3 c vegetable oil
  • 1 tsp granulated sugar
  • 1/2 tsp black pepper
  • 1/2 tsp Cayenne pepper
  1. Preheat oven to 350°

  2. Place meatballs in a oven safe dish, and bake according to package instructions.

  3. While the meatballs are baking, combine all ingredients for the Spicy Garlic sauce in a small sauce pan, and whisk together

  4. Bring sauce to a boil, and then reduce to a simmer

  5. Simmer for 20 minutes

  6. Once the sauce and the meatballs are both finished, toss the meatballs in a liberal amount of sauce.

  7. Serve immediately with ranch or blue cheese dressing

You might have Spicy Garlic Sauce leftover. This sauce does not go bad quickly and does not need to be refrigerated.

Every week, I try to come up with a few recipes for the upcoming evenings. As a full time teacher, I have very little energy for detailed recipes, and we don’t have enough of a budget to eat out every night. Here is our menu for the week:

Homemade Pizza

I love to buy pre-made pizza crusts, instead of making my own. I’ll admit, I have yet to be successful with pizza crust and breads, despite my best efforts, and to be honest, I don’t have time to conjure up a crust on a Monday night. I love to take advantage of Amazon Prime Pantry, which is where I was able to find 3 pack Flatzza Pizza Crust. These crusts do not require pre-baking, so they are optimal for weekly meals!

I toss a few dollops of Ragu Pasta Sauce to the crust, and spread it around. I do not like a lot of sauce, so I usually only use about 3 teaspoons of sauce, I purposefully use pasta sauce instead of Marinara sauce. Marinara sauce is hard to reuse, and I prefer the pasta sauce taste. I add shredded Cheddar and Colby Jack cheese on top of the pizza, sliced tomatoes, spinach, mushrooms, and olives. The beauty of this recipe is that it can be topped with anything you like. Once topped, bake this pizza on 500 degrees for 10 minutes.

Roasted Garlic Veggies with Chicken Breast

Roasted veggies can really be delicious, and this week, I’ll be making my favorites. I roast broccoli florets and brussel sprouts in olive oil and minced garlic. It is so easy. Lather your broccoli and brussel sprouts in olive oil, salt, pepper, and minced garlic (I use about a teaspoon). Bake your veggies at 350 degrees for 20-30 minutes.

At the same time, saute your chicken breast (I like to thinly slice the breast before I cook it) in lemon pepper seasoning. It is easy and tasty!

Pancakes and Homemade Syrup

This barely counts as a recipe because I am mixing up Bisquick to make some tried and true pancakes. I will top my pancakes with homemade syrup. If you’ve never made homemade syrup, you’re missing out. It is so easy!

For this syrup, you mix equal parts water and brown sugar. Simmer your simply syrup on low heat, and toss in a little bit of Maple Extract (the amount is up to you).

Cold Chicken Pasta

This week is parent-teacher conference for my school district, so I have to do a little meal prepping. This Cold Chicken Pasta is perfect.

I boil some penne noodles in salted water, drain, and toss in about a tablespoon of butter, fresh spinach, diced tomatoes, red pepper flakes, salt, and black pepper. Top with the dressing of your choice, I’ve made Carmy’s Homemade Garlic Dressing. Carmy has a very similar Cold Chicken Pasta, that I love, from which I adapted this recipe!

Blue Apron – Seared Steak and Roasted Potatoes

Doesn’t this look delicious? This will be delivered straight to my door Friday. I will be enjoying seared steak, roasted potatoes, spinach, and mushrooms. It is a fan favorite, and I cannot wait. All ingredients are included. Isn’t this an awesome Valentine’s day celebration?

We’ve all been there. Heck, I’m there at least once a month! When the money is tight, but you still get hungry, make these tasty recipes.

Lemon Butter Pasta

For this recipe, you will need:
– thin spaghetti (1 lb for $1)
– 1 lemon ($0.25)
– butter (4 sticks for $1)

I love this recipe, to be completely honest. We eat this weekly, even right after payday. In total, you can make 6+ services for less than $3. Not bad!

Lemon Butter Pasta

  • 1 lb thin spaghetti
  • 1 stick butter
  • 1 lemon (juiced)
  • salt and pepper (to taste)
  1. Cook your spaghetti with salted water until al dente. Drain spaghetti and add 1 stick of butter, the juice of 1 lemon, and salt and pepper to taste.

Cheesy Broccoli Rice

For this recipe, you will need:
– frozen broccoli ($1)
– rice ($1.30)
– cheddar cheese ($4)

This is another staple in our household. It’s tasty, quick, and a crowd pleaser!

Cheesy Broccoli Rice

  • 1 lb rice (cooked)
  • 1 bag frozen broccoli
  • cheddar cheese (shredded)
  1. combine cooked rice, frozen broccoli, and cheddar cheese in a casserole dish. Bake for 15-25 minutes at 350 degrees, or until golden brown.

Sloppy Joes

For this recipe, you will need:
– 1 lb ground beef ($4)
– 1 c. ketchup (<$1)
– 1 TBS mustard (<$1)
1 Tbs brown sugar (<$1)

My husband loves this recipe because it only has 4 ingredients!

Sloppy Joes

  • 1 lb ground beef (browned)
  • 1 cup ketchup
  • 1 TBS mustard
  • 1 TBS brown sugar
  1. Brown the ground beef, drain oil, and add ketchup, mustard, and brown sugar. Mix together and simmer fo 20 minutes.

Cheesy Fries

For this recipe, you will need:
– frozen French Fries ($1)
– cheddar cheese ($4)
– pickled jalapeños (<$1)

These fries are a favorite of mine! They remind me of the State Fair, with the comfort of home.

Cheesy Fries

  • 5 lb frozen fries (baked)
  • cheddar cheese
  • jalapeños
  • bacon bits
  1. Top pre-baked fries with cheddar cheese and bake until cheese is melted. Top with Jalapeños and bacon bits. 

Vegetable Fried Rice

For this recipe, you will need:
– 1 lb rice ($1.30)
– soy sauce ($1)
– mixed vegetables, frozen ($1)

Yet another favorite. Can you tell I love all of these recipes? This recipe is great because it doesn’t feel like a “cheap” recipe!

Vegetable Fried Rice

  • 1 lb rice (cooked)
  • soy sauce (to taste)
  • mixed vegetables (frozen)
  1. Combine the cooked rice, mixed vegetables, and soy sauce in a sauce pan that has been greased. Sauté on medium heat until golden brown and crispy.

Hello, all! I know many of you are planning to throw a watch party this Sunday. Here are a few of my absolute favorite Super Bowl finger food recipes!

Copycat El Acapulco Queso

My grandpa has had this family recipe for years, and it has constantly received complement after complement. It is a tangy yet creamy version of the ever loved Mexican restaurant queso. Like El Acapulco’s queso, this recipe is a yellow cheese dip. You and all your guests will love it!

For this recipe, you will need:
– 4 Tbs flour
– 1 stick of butter
– 1 + c. milk
– 1 can Rotel
– 24 slices of American cheese
– 1 tsp cumin seed
– 1 tsp ground cumin
– 1 tsp chili powder

You will start by making a roux. This is incredibly easy. Melt the butter over medium-high heat, and add the flour. Cook the butter and flour mixture for a minute – your flour should begin to look golden brown. This roux will make your queso creamy. If you were to skip this step, you would have a soup, rather than a dip.

Add 1 cup milk and Rotel to your roux. You will mix this all together, to blend in the roux with the liquids. At this time, you will add the cumin seed, ground cumin, and chili powder.

Once it is all mixed, You will add the cheese, one slice at a time, constantly stirring. Once everything is mixed together, continue stirring until the dip is the consistency you prefer. You will add more milk during this time. You just add as much milk as you prefer. I like my cheese dip to be really creamy, so I usually add around 2-3 cups of milk.

Serve immediately with tortilla chips or Doritos!

Homemade Tortilla Chips

This recipe comes from Live Healthy, and it is incredibly easy, tasty, and fresh. These chips will go wonderfully with any dip or guacamole!

For this recipe, you will need:
– flour tortillas
– olive oil
– onion powder
– garlic powder
– dried parsley
– dried basil
– salt and pepper

You will start by preheating your oven to 350 degrees. You will then cut your tortillas into fours. Lightly cover the tortillas with olive oil, and sprinkle your tortillas with onion powder, garlic powder, parsley, basil, salt, and pepper. You want to add seasoning before baking your chips.

After your tortillas have been seasoned, bake your tortillas until they are crispy and golden brown. This will be about 10-15 minutes.

The chips are easily adapted to your preference, too. If you prefer spicy chips, you can top your tortillas with chili powder, paprika, salt, and pepper. You can also make dessert chips with sugar and cinnamon.

Copycat BWW Spicy Garlic Wings

I love making this recipe for every event! The only thing you actually have to make is the Spicy Garlic sauce, which can be preserved in the freezer for months.

For this recipe, you will need:
– fried boneless chicken wings
– 1/2 c. Red’s Cayenne hot sauce
– 3/4 tsp garlic powder
– 1/2 tsp sugar
– 1/4 tsp black pepper
– 1/4 tsp Worcestershire sauce
– 1 tsp water

Begin by combining all ingredients in a saucepan on low heat. Simmer for 20 minutes, and apply to fully cooked wings. Serve with Ranch Dressing or Blue Cheese Dressing.

Ham and Cheese Sliders

Carrie from Eating on a Dime really out did herself with this one. This is such a crowd pleaser, and though it isn’t great for a diet, it tastes so good! You can make a bunch of these little sliders at a time, making it perfect for a crowd.

For this recipe, you will need:
– 12 King’s Hawaiian Rolls
– 3/4 c. melted butter
– 1 Tbs Dijon Mustard
– 1 tsp Worcestershire sauce
– 1 tsp brown sugar
– 1 tsp Poppy Seeds
– 2 tbs dried minced onions
– thin sliced deli ham
– thin sliced Swiss cheese

Preheat your oven to 350 degrees, and combine butter, Dijon mustard, Worcestershire sauce, sugar, poppy seeds, and minced onions. Set aside.

Slice your Hawaiian rolls to make a sandwich. You will do this in one piece, instead of breaking the rolls into individuals. This saves a ton of time.

Place the bottom of your Hawaiian roll “sandwich” inside the bottom of a baking dish. You will then layer the thinly sliced ham and cheese atop the rolls. Place the top of your “sandwich” on the cheese, and top with your butter mixture.

Bake for 20 minutes, or until the rolls are golden brown. Cut along the original roll lines and serve.

For this recipe, you will need:
– 1 quart low sodium, low fat chicken or bone broth
– chopped carrots, onions, celery, and mushrooms
– shredded chicken breast
– 2 eggs, beaten (think egg drop soup)

You will bring all ingredients to a boil and simmer until your vegetables are fully cooked (20 minutes).

Rachael’s Breakfast recipe is gaining popularity for good reason! She first discovered a similar recipe in a “little French Bistro,” and her recreation is a close dupe! It has all the nutrition we need for a good day!

For this recipe, you will need:
– 1 Tbs olive Garden Italian Dressing
– 14 gm of mozzarella cheese
– 1 c. Arugula
– 1 egg
– 7 gm Kirkland’s Signature Crumbled bacon

Beat the egg, add the cheese and bacon and scramble like an omelet. Clean the arugula and dress with the Italian Dressing. Enjoy!

2 point Skinny Sundae by Rosie

Rosie’s Skinny Sundae

Rosie makes this dessert when she is craving something sweet, and she thinks this might actually be the best dessert she has ever eaten!

For this recipe, you will need:
– Fat Free Greek Yogurt
– 1 tsp instant cheesecake pudding mix
– Unsweetened Cherry flavored Applesauce
– CoolWhip for toppings
– Chocolate Chips for topping

Mix together the greek yogurt, cheesecake pudding mix, and the applesauce. Remember greek yogurt and applesauce are no points, so you can add as much as you want! Top with whipped cream and a few chocolate chips.

6 point Pizza – Topped Chicken by littletomato00

Littotomato00 considers this recipe a “staple” in her house. It is easy for a quick, after work dinner, and it curbs the cravings for junk food like pizza!

For this recipe, you will need:
– 2 chicken breasts
– 2 TBS mozzarella cheese
– 10 turkey pepperonis
– 1 tsp pizza sauce

Grill your chicken and top with pizza sauce, cheese, and pepperonis. Bake until cheese is melted at 350 degrees, and enjoy!

Lbarber0713 has made several versions of these protein waffles, and we think this one might just be our favorite! This recipes makes 3 mini waffles and it is topped with red velvet Enlightened Ice cream.

For this recipe, you will need:
– 1 scoop Bowmar Nutrition Protein (frosted cookies flavored)
– 1 full egg
– 1/2 tsp baking powder

Do any of you strive to eat healthier this year? Me, too. I regained Weight Watchers (WW), which helped me reach incredible success in April! I lost 25 lbs!

Granted, this post is not about the wonders of WW, but, honestly, it was and still is a game changer for me. I do not feel like I am dieting when I am on this program, and, as a serial dieter, I have noticed this is the only program that offers sustainable advice and results. Why? Because magic? No. On WW you eat whatever you want in moderation, which has proven to be effective and sustainable for the long term. There are foods you can eat unlimited amounts of, like beans, veggies, fruits, chicken, and shrimp. Having these “unlimited” foods has removed the diet stigma from my brain and allowed me to lose weight.

WW has been the only “diet” in which I have seen results. Nothing else worked. Not the Military Diet, which was recommended by my Army Grandfather. Not the Low Carb Diet that has remained popular for years. Not even calorie counting worked for me. All because I could not get past the mental hangup of dieting.

Skinny Caramel Macchiato – 2 pts

If you read my previous DIY Starbucks Caramel Macchiato, you know that coffee is important to me. So important that I created my own “Skinny” version. This is only 2 points, and it really is good.

You will need:
– 3 shots of espresso
– 1 Caramel Premier Protein shake

In order to make this delicious coffee, you just need to pour your espresso over ice and then top with your protein shake.

It is a delicious dupe!

*You can blend the ice, espresso, and shake for a Frappe!

Banana Bread – 4 pts

This is the actual picture of Jennifer’s Banana Bread! Isn’t it beautiful?

I first discovered this recipe months ago, and it has been a staple in our household ever since! This recipe is written by Jennifer at I Save A to Z, but I did adapt this recipe to our own needs.

You will need:
– 5 large, ripe bananas
– 2 cup all purpose flour
– 2 tsp baking powder
– 1 tsp baking soda
– 1/2 tsp salt
– 5 tsp butter at room temperature
– 1/2 c. brown sugar packed
– 1 large egg
– 1/4 c. fat free skim milk
– 1/2 c. splenda (optional)

Preheat your oven to 350 degrees. Mix together all dry ingredients. Smash bananas and add to the dry ingredients. Add in wet ingredients and mix until smooth. Pour into greased bread pan, and bake until golden brown and knife comes out clean (about 1 hour). Cut into 12 slices.

I like to add in Splenda because I love sweets!

Tortilla Pizza – 6 pts

This is Sabrina’s actual Tortilla pizza! Doesn’t it make your mouth water?

Guys, this is a game changer. I love this pizza because it actually tastes like pizza! I originally found this recipe at Dinner then Dessert by Sabrina, but I adapted it to my own delicious needs.

You will need:
– medium sized flour tortillas
– Ragu Simply Traditional Pasta Sauce
– Mozzarella and Cheddar Cheese blend
– Pepperoni (optional)

Preheat your over to 450 degrees. Place your tortilla on a pizza pan, put 1 tsp pasta sauce on your tortilla and spread it all around. Add 1 oz (roughly 2 TBS) of cheese, and bake until the cheese is melted and the crust is crunchy and delicious.

I did not add pepperoni because it added another point, but you would want to do that when you add cheese!

Italian Spinach and Tomato Tortellini Soup – 3 points

This recipe is also decadent and filling, and I am not a soup person, so that is really saying something! This can be made in the crockpot or on the stove top, which is awesome for working moms.

You will need:
– roughly 80 oz. of fat free chicken broth
– 2 large cans of diced tomatoes
– 4 cups of spinach
– 2 TBS Italian Seasoning
– 1 TBS parsley
– 1 TBS basil
– 1 package of cheese filled Tortellini
– Salt and Pepper to taste

Throw all ingredients together in a crockpot and cook for 4 hours on low, or simmer on stovetop for 30 minutes.

One serving is 1 1/2 cup.

“Skinny” Poke Cake – 4 points

This cake is a creation that I came up with one afternoon when I was craving some Chocolate Poke Cake. This version is pretty stinking great!

You will need:
– 1 devils food cake mix, prepared and baked as normal
– 1 package of fat free vanilla pudding, prepared
– fat free whipped cream

Once your cake is out of the oven and still hot, poke holes across the top with a straw. Pour the pudding over the cake and allow to cool in the fridge. Top with whipped cream and enjoy!

This cake makes 16 servings!

12 Days of Christmas: Easy “Work Party” Crockpot Recipes

I’ve got a work Christmas party tomorrow, but I really don’t have any time to actually cook something. I have to grade papers (insert teacher cry), fix dinner for my fam, and prepare for Christmas, which is only 5 days away!

Nobody – and by nobody, I mean me – has time to slave over a stove anymore. Crockpots are life! So, here are 4 crockpot recipes that will rock your work Christmas parties.

Teriyaki Meatballs

Speaking of which, I will be making this for the party tomorrow! It is so easy AND delicious! I’m not even exagerating.

For this recipe, you will need:
– 2 bags of frozen meatballs ($10)
– 2 jars of teriyaki sauce – I use P.F. Changs ($7)
– 1 small can crushed pineapples ($0.77)

Throw all of this in a crockpot and cook on low for 6 hours or high for 3. You will want to stir it every 30 or so minutes.

You will love this recipe. If you need to half the recipe, just go ahead and throw the entire can of crushed pineapples in. It won’t hurt anything!

Cocktail Weenies

This is technically my mom’s recipe, and she might get me for sharing it with you guys, but you deserve something good!

This tastes nothing like the BBQ and grape jelly recipe that has been floating around, and honestly, that grape jelly recipe doesn’t hold a candle to this. It really is that good.

For this recipe, you will need:
– 2 packs of little weenies ($7)
– 1 bottle of spicy BBQ sauce – this really adds a nice tang! ($3)
– 1 can cream of mushroom ($0.64)

Mix all of the ingredients together and cook on low for 4 hours.

To be honest, I hate mushrooms, but I never noticed they were in this recipe. This is a Christmas staple for our Christmas Eve dinner. I think you will like it, too.

Chocolate Poke Cake

Guys, my coworkers don’t even know I know how to make this, yet, but they will hate me for not bringing it tomorrow. This is another one of my absolute favorites!

For this recipe, you will need:
– 1 box mix of Chocolate Cake – prepared as directed ($1)
– 1 can sweetened condensed milk ($1.50)
– whipped cream ($2.50)
– caramel sauce ($2.50)
– Heath Chunks ($2.00)

All of these ingredients can be found at your local grocery store, and the Heath Chunks can easily be switched out for a different type of candy.

After you bake your cake as directed, poke holes throughout the entire cake with a straw. While the cake is still hot, pour the sweetened condensed milk and caramel over the cake. You will then let the cake cool completely, in the fridge. Once cool, top with whipped cream and Heath Chunks. Store in the fridge until ready to serve.

Your coworkers will love this recipe! If you are on a diet, you can use low fat sweetened condensed milk, which still tastes awesome! You can use light whipped cream or even sugar free whipped cream, and you can omit the candy on top to save calories. I have done my recipes both ways, and they taste equally incredible!

CrockPot Easy Chicken Spaghetti

This is a recipe I make regularly for dinner. It does require more hands-on work, but it will feed more people!

For this recipe, you need:
– 1 LB spaghetti ($1)
– 2 cans rotel ($2)
– 2 cans nacho cheese in a can ($3) – trust me!
– 1 large can of cream of chicken ($1.50)
– 1 rotisserie chicken ($5)

Shred and skin your rotisserie chicken, while your spaghetti is boiling. Once your spaghetti is finished, drain it, saving 1 cup of water. Add spaghetti, chicken, and water in the crockpot, and throw in the rotel, cream of chicken, and nacho cheese. Stir this up and cook on low for 3 hours.

This is a really easy, tasty take on the traditional chicken spaghetti. I like to bring it to dinner parties because it is so easy to make ahead of time and keep warm.

Tip: If you pasta starts to become dry, add a little bit of water to the mix. It won’t hurt it! And don’t forget to salt and pepper!
